Date, goji and coconut balls are an ideal sweet but healthy snack to satisfy your sweet tooth. Keep them in the fridge and take one or two to work, on a shopping spree or to the gym. Ingredients date, goji and coconut balls – 12 portions
– 12 Jumbo Medjool dates – sticky dates.
– 20 Grams of grated coconut.
– 15 Grams of chia seeds.
– 25 Grams of Goji berries.
– 100 Grams of mixed roasted nuts – just choose the nuts you like.
– Optional: 25 grams of raw cacao.
How to make healthy date, goji and coconut balls
Put the mixed roasted nuts in your foodprocessor. Put the small pieces on a plate. Add the grated coconut, chia seeds, goji berries and, if desired, the raw cacoa to the plate. Remove the pits from the dates and put them in the foodprocessor. Roll balls from the date paste and roll them through the mixed coconut, chia seeds, goji berries and raw cacao.
Save the date, goji and coconut balls in the fridge and take them anywhere in a piece of aluminium foil.
